Vegan Kale Caesar Salad
Unlike the traditional Caesar salad, this guilt-free recipe is light, satisfying and completely vegan and gluten free friendly. All the flavours of this crowd favourite salad on a kale base and enhanced with our maple bacon coconut chips. Plus although it's not usually found in the typical Caesar salad, we added chickpeas for extra goodness. Yes please!

VEGAN KALE CAESAR SALAD
GLUTEN FREE - VEGAN
SERVES 2-3
PREPARATION: 15 MINS
INGREDIENTS
SALAD:
Bunch of kale, de-stemmed
1/2 can chickpeas, drained
1/2 - 1 ripe avocado, sliced
2 tbsp maple bacon coconut chips
Optional: Knowrish Well Better Cheddar vegan cheese powder
DRESSING:
2 cloves garlic, crushed
1 tbsp French mustard
4 tbsp unhulled tahini
4 1/2 tbsp fresh lemon juice
6 1/2 tbsp extra virgin olive oil
1 1/4 tsp Agave syrup or Rice malt syrup
2 tbsp almond milk
Salt and pepper to taste
DIRECTIONS
- Start with making the dressing by whisking together the mustard, tahini, and lemon juice. Gradually whisk in olive oil until mixture turns white and creamy. Then mix in garlic, agave syrup, almond milk, and salt and pepper to taste.
- Assemble the salad by arranging the kale leaves (massage them beforehand with a little olive oil to help make them tender if desired), avocado and chickpeas. Finish off by drizzling the dressing over the salad and by sprinkling Knowrish Well Maple Bacon Coconut Chips ( and nutritional yeast flakes). Enjoy!
