Peach is definitely an underrated flavour, why aren't more things peachy? In our quest to find a delicious peach inspired dessert, we came up with an amazingly simple, vegan peach ice cream recipe. The consistency is somewhere between sorbet and luscious ice cream which makes it extra refreshing.
For the peach ice cream you'll only need five ingredients and a high-powered blender or food processor (there's no 'It's Complicated' status here). Four of the ingredients you'll throw into the blender/processor and the lucky fifth ingredient, our Blueberry Maqui Coconut Chips, you'll lovingly sprinkle on top when you go to serve your ice cream up. The flavour combination is incredible!

JUST PEACHY ICE CREAM
GLUTEN FREE - VEGAN
MAKES: 600ml Ice Cream
PREP TIME: 5 min
FREEZE TIME: Overnight
3 cups of Peaches, frozen and stones removed
½ cup Coconut Milk, refrigerated
3 tbsp. Rice Malt or Coconut Nectar
2 tbsp. fresh Lemon Juice
2 tbsp. Knowrish Well Blueberry Maqui Coconut Chips (topping)
- Add all ingredients (excluding the Coconut Chips) to a blender and blitz until smooth
- Transfer ice cream mixture to a container and let freeze overnight
- Remove from freezer when ready to serve
- Top with Knowrish Well Blueberry Maqui Coconut Chips & enjoy!
