GF CHOC SPONGE CAKE

DRY INGREDIENTS:
1 ⅓ cup gluten-free plain flour
¼ cup cocoa powder
¼ cup Knowrish Well Lady Love
¾ teaspoon baking soda
¼ teaspoon salt
WET INGREDIENTS:
½ cup plant-based milk, room temperature
½ tablespoon lemon juice
2 large egg , room temperature (or egg replacement)
1 large yolk , room temperature (or egg replacement)
¾ cup coconut sugar
½ cup coconut oil
1 teaspoon vanilla extract
MAKE ME:
Preheat the oven to 180 degrees. Oil and line a square cake tin
Mix all the dry ingredients in a bowl and set aside
Make buttermilk by combining milk and lemon juice in a bowl; set aside for 10 minutes. Then add the rest of the wet ingredients to the bowl and mix with a hand whisk until well combined.
Pour the dry ingredients into the wet ingredients and mix until the batter is smooth.
Pour the batter into the prepared tin.
Bake in the oven for 15-20 minutes, or until cooked.
Remove and let cool completely.
