CHEESECAKE BARS BY FOOD DESIGN STUDIO
Although the weather is getting colder, there is always room for a delicious frozen treat. Enter the most delicious Cheesecake Bars created by the lovely Bec from Food Design Studio. Loaded with raw cashews, creamy coconut milk and chocolatey Lady Love™ swirls, this deeply nourishing dessert is sure to satisfy any sweet tooth.

INGREDIENTS:
Base:
3/4 cup rolled oats
1/2 cup nuts of your choice
1 cup medjool dates, pitted and sliced into smaller size pieces depending on your food processors abilities
1 teaspoon vanilla extract
1 teaspoon of salt
Filling:
1 3/4 cups raw cashew nuts, soaked in boiling water for at least 1 hour and drained 1 cup coconut milk from a can
2 teaspoons Knowrish Well Gypsy Rose Super Latte
1/4 cup melted coconut oil
1/4 cup maple syrup or rice malt syrup
2 tablespoons freshly squeezed lemon juice
Chocolate Swirl:
2 tablespoons Knowrish Well Lady Love
1/4 cup coconut milk from a can
MAKE ME:
Line a 8x8n inch baking pan or a standard sized loaf tin with parchment paper. Place all base ingredients into a high speed blender and blend until a dough is formed. Transfer the dough to the pan and use your fingers to spread it out into the corners evenly. Use something flat to press the base down firmly so that it is one even layer.
Drain the cashew nuts and place the filling ingredients into a high speed blender and blend until smooth and creamy.
Transfer to the pan and pour on top of the base layer.
In a small cup whisk the swirl ingredients well until smooth. Spoon teaspoon sized dollops of the swirl mixture onto the cheesecake filling.
Use a skewer to swirl around and blend slightly. Swirl until your heart's content! :) Place the slice into the freezer to set for at least 4 hours before removing to slice into bar sizes of your choice.
Keep in an airtight container in the fridge or freezer for up to 4 days.
Note if you decide to keep in the fridge, the bar filling will be a lot softer. It is still edible and just as delicious but you will need to have sliced the slice into bar sizes first.
