Add some veggie magic into your next burger night with the Best Ever Veggie Patties created by the gorgeous Bec from Food Design Studio. Full of colourful veggies and plant-based flavour (thanks to our Wild Fields Mushroom Broth and Better Cheddar), these patties are super nutritious and perfect for an easy weeknight dinner. For an extra #mumwin, these beauties can be made in large batches and frozen for a quick meal on-the-go.

150g mushrooms of your choice, finely diced
1 small head of broccoli, stems discarded and florets finely diced
1 large carrot, grated
1 small onion, peeled and diced
2 large cloves of garlic, peeled and minced
3 tablespoons Knowrish Well Wild Fields Mushroom Broth
2 tablespoons Knowrish Well Better Cheddar
2 tablespoons tomato paste
Pinch of sea salt
Pinch of cracked black pepper
1 - ½ cup panko crumbs
4 burger buns of your choice
Sweet chilli sauce or sauce / dressing of your choice
Preheat a large frying pan on the stovetop over a high temperature.
Add 2 tablespoons of olive oil to the pan.
When at temperature pan fry the mushrooms, broccoli, carrot, onion and garlic until the mushrooms have cooked through and are soft and juicy.
Add the tomato paste, mushroom broth and better cheddar and stir to combine and soak up some of the natural juices from the vegetables.
Transfer the veggie mix to a high speed blender and blend until only slightly chunky. Transfer the veggie mix to a medium sized bowl and add the panko crumbs. Stir in the panko crumbs, cover and place in the fridge for a couple of hours to firm up.
Scoop approx 3 heaped tablespoons of the veggie pattie mix into the palms of your hands and roll into a ball.
Flatten slightly in between your two palms and pan fry for a few minutes in a frying pan over a medium temperature until warmed through and slightly golden and crispy on the outside. Assemble into a burger of your choice and enjoy!
Patties can be premade and kept in an airtight container or glad wrap for up to 4 days before cooking to consume.
After a twist? Instead of rolling these into patties, roll them into small balls and enjoy over a salad, similar to falafels!
