Blue Dream Coconut Bars
Here at Knowrish Well, we are coco-nuts about coconut. This versatile drupe (botanically speaking) provides us with a number of vegan and gluten free go-tos and we just can’t get enough. Oil, milk, cream, flour, sugar, water; it really is the gift that keeps on giving. So we’ve taken our love of this hairy little fella and featured him three times in our decadent blue dream coconut bars. Rocking a gorgeous baby blue hue and coated in rich dark chocolate, we’ve given our fave a little makeover for a treat that pleases both the eyes and tummy.
These stunning, better-than-store-bought coconut bars are suprisingly simple to make. You’ll only need your various forms of coconut, maple syrup, Blue Dream Super Latte powder (which we already know you have since it’s ah-mazing) and the most important ingredient of all, dark chocolate! You can use any brand you like and any strength you like, it all comes down to personal preference so pick what you love and make your tastebuds dance.
Every bite of this blue delight will not only taste like a dream, but will also help to calm your nerves too. The colour blue if scientifically proven to sooth your stressors and help you relax, that’s why it’s such a popular colour in work places. In our own office for example, we have a pastel blue feature wall for this exact reason. So while you go to town on these moreish bars, you can take a breather and settle your mind at the same time.

BLUE DREAM COCONUT BARS
INGREDIENTS
1 cup (235ml) light coconut milk
5 tbsp maple syrup
4 tbsp coconut butter or creamed coconut
¼ tsp salt
2 cups (110g) desiccated coconut
1 tbsp Blue Dream Latte powder
200g dark chocolate, melted
MAKE
1. Pour the milk into a saucepan along with the coconut butter, maple syrup and salt. Heat on low until everything is combined.
2. Take off the heat and fold in the desiccated coconut and blueberry powder.
3. Press down into a loaf tin covered with parchment paper. Freeze for 2-3 hours.
4. Slice into 12 bars and coat with the melted chocolate. Freeze again for 30 minutes to allow the chocolate to set. Enjoy!
Store in the fridge for up to 3 days. Alternatively freeze and take out 15 minutes before serving.
